how can i find out about original engine numbers for a 1957 chevy belair?

Unlike Pontiac, Chevrolet did not stamp engine blocks with a corresponding matching vehicle vin. The best you can do is a properly date coded block and plant coded block.
For 57 engines were stamped with a serial number which broke down to Unit Number, Plant (F=Flint MI, T=Tonawanda, New York), Model Year and finally Engine Type.
If you have the engine post the block numbers and we can help decode it, you can find the numbers on a pad, front right hand side of the block behind the water pump.

once decoded will we be able to tell if its the original?

F620FC - Decodes too:
F = Flint, Michigan
6 = Month (June)
20 = Day (June 20)
FC = 283 - 8 Cylinder with Powerglide and 4bbl.
The last piece of the puzzle would be a casting number block.
Again, there is NO definitive way to tell if the engine is original to the car...
